552,256. Conching chocolate. LAWTON, G. Aug. 26, 1941, No. 10889. [Class 86] An apparatus for conching chocolate comprises a trough 1 in the side walls 2 of which is mounted a shaft 3 carrying end plates 4 to which are secured rods 5 having freely mounted thereon discs 6 spaced apart by distance pieces 7. These discs arearranged so that they intercalate, as shown. Passages 8 are provided in the trough casing for the circulation of hot or cold fluid for regulating the temperature of the liquid chocolate. The top of the trough may be left open, or may be fitted with an air-tight cover plate, and the supply of air may be controlled by blower or suction means. Air or oxygen may be bubbled through the liquid chocolate.
