548,230. Concentrating fruit juices; malic acid. CHARLEY. V. L. S. HOPKINS, D. P., and POLLARD, A. April 30. 1941, No. 5603. [Class 32] [Also in Groups IV and VI] Fruit juices containing malic acid, e.g. apple or plum juices, are concentrated with recovery of malic acid by concentrating the juice below 70‹C. and under pressures at or below 60mm. of mercury, neutralizing the acid by addition of calcium carbonate or lime at any stage of the concentration, continuing the concentration until the sp.gr. of the juice reaches 1.200 or over and then raising the temperature to 70‹C. or over whereupon calcium malate is precipitated and removed by filtration or centrifuging, the concentration beinig then carried further if desired.
