Abstract

A fatty acid derivative of a polyhydric alcohol is incorporated with yeast at any stage in its manufacture, or with dough or similar materials. The fatty acid may be lauric, palmitic, stearic or oleic acid and the polyhydric alcohol may be diethylene, triethylene or dipropylene glycol, or mannitol, erythritol or sorbitol, preferred derivatives being those from lauric acid and sorbitol. The proportion of the latter may range from 0,12 to 1 per cent with yeast or 0,12 to 0,25 per cent with dough. Simple lauric acid esters may be used as additional ingredients.
