[Class 28 (ii)] A machine for slicing pieces of salmon or like fish having skin upon one side, comprises a conveyer 4 which feeds the fish towards a reciprocating knife 14, arranged transversely to the conveyer, which cuts through the fish but not through the skin, the skin being severed from the slice by a reciprocating knife 25 also arranged transversely to the conveyer. The knife 14 is clamped in the ends 13 of arms 10 which are slidable on a rod 9 on which they are spaced by a tube 11. The rod 9 is secured to a plate 7 forming part of a bracket 5 pivoted on an inclined pivot pin 6. The plate 7 supports a motor 8 which drives through worm gearing, an eccentric coupling by its rod 19 to one of the arms 10. A crank-pin 23 on the eccentric shaft 17 engages a slot in a lever 20 pivoted at 21 and connected by a link 24 to the knife 25 which is thus reciprocated oppositely to the knife 14. The fish abuts against a stop plate 12 carried by the tube 11. The knife 25 is secured to a dovetail guide rail 26 carrying a pin 28 having a pivotal head 29 to which the link 24 is connected. In operation, the rod 9 is lifted about the pivot 6 to raise the knife 14 above the fish. A projection upon the bracket 5 strikes a pawl-lever which rotates a ratchet-wheel connected by gearing to one of the rollers supporting the conveyer 4. The raising of the knife thus feeds the fish forward for slicing, and the slice-thickness is regulated by a stop pin, associated with any one of a series of holes, which regulates the extent to which the pawl-lever is returned under the influence of a spring. The motor may be mounted on the machine frame, the transmission mechanism being suitably modified. The slices are received upon a table 30.
