Abstract
In the production of glycerine by yeast fermentation of sugars in alkaline media the mass is aerated practically all the time fermentation is proceeding, preferably in presence of oxidation catalysts, e.g. manganese or iron salts. In an example, 50 kg. of sodium sulphite is added in portions to a fermenting batch of 100 kg. of sugar, 2 kg. of ammonium phosphate, 1 kg. of magnesium sulphate, and 10 kg. of top fermentation yeast race M in 1000 litres of water, and 25,000 litres of air per hr. is supplied through a porous ceramic body to produce fine aeration; the hydrogen-ion concentration is held within limits as by addition of alkali when necessary. After 8 hrs. the glycerine, amounting to 21,5 per cent. of the sugar, is recovered in known manner. The separated yeast is fit to be re-used directly. In a second example mould yeasts, e.g. the genera Mycoderma, Tichia, Willia, and Torula are used.
