[Class 135] A valve closure for food-preserving vessels which have to be exhausted of air comprises a cup shaped casing 4 having an inlet 18, a rubber washer 17 surrounding this inlet, a mushroom type valve 16 adapted to seat on this washer, and a shouldered screw plug 11 with a central duct 14, 15 adjustable in the casing for clamping the valve member 16 onto the washer 17. The casing 4 is provided with a nipple 3 for securing onto the vessel 1, this nipple having a central duct 9 to the inlet 18 and a lateral aperture 10 communicating with the space between the nipple and the wall 1 to ensure that no air is trapped in this space. Transverse grooves 21 are provided in the plug 11 so that the air can be exhausted by means of a pump or by the generation of steam in the vessel, the plug then being screwed down onto the valve which seats onto the washer 17. A rubber sleeve 19 is provided to fit over the plug 11 and the casing 4 to seal the joint between these two members.
