Abstract

<PICT:0448539/III/1> A separate heater and evaporator apparatus for milk, fruit juices, &c. comprises a tubular jacketed evaporator A with an inlet chamber 21 and an outlet 23 extending into a collector 24 from which liquid separated from vapour is removed by a pump 38a having a decidedly drooping head capacity curve. The latter causes the liquid entering the tubes to be immediately flashed into mist and also maintains the collector substantially free of a stored body of liquid. The evaporating conditions are also enhanced by connecting the vapour pipe 26 of the collector to vacuum and preheating the liquid to be evaporated. The tubes of the evaporator are shrouded by a casing 20 forming a jacket between the outer walls 14, to which steam is supplied for heating. The latter flows upwardly in the jacket and then downwardly between the tubes. The pump may deliver to a second effect B and a greater number of effects may be used.
