Abstract
In the preparation of margarine, malt wort or extract and lipoids, in particular lecithin, or sterols e.g., cholesterol, are added to the usual fat or oil mixture. These substances may be added separately to the fat or oil mixture, the malt extract being dissolved for example in water or milk and the lipoid or sterol in oil, or may be emulsified together or with water or milk, before being added. In an example, to 100 parts by volume of a mixture containing for example fish oil, earth nut oil, coconut oil, and soya bean oil, are added 20 parts by volume of sound skim milk or water containing about 1.8 parts of an emulsion of lecithin and malt extract, the emulsion containing 75 per cent by weight of dry substance of which 10 per cent is lecithin.
