Abstract
552,561. Emulsions. WALKER'S DAIRIES, Ltd., and HUMPHRISS, E. L. E. Aug. 8, 1941,. No. 10067. [Class 1 (i)] [Also in Group VI] An emulsifying agent is used in the aqueous phase of an ice cream preparation, particularly one employing substitutes for butter and milk, in addition to the usual agent for the fatty phase. 'The same agent may be employed, in which case it is added separately. For the fatty phase the agent may be that known under the Registered Trade Mark " Abracol," while lecithin may be used for the aqueous phase, or in certain cases for both phases. Sodium alginate is prefered as a stabilizer, or gelatine, corn starch or Irish moss may be used. One example of an ice cream preparation comprises wheat flour dispersed in water, sugar, glucose, vegetable oil or fat (cocoanut or palm kernel oil), "Abracol sodium alginate and if desired dried egg yolk. Rye or potato flour may be used in place of or in addition to wheat flour. Malt extract and lecithin dispersed in water are added and the mixture maintained for a time at 145‹F. Saccharine is then added and the mixture is cooled and frozen. Sodium chloride, phosphate or lactate, and vitamins A and D may be added.
