Before entering a continuously-operated oven b the dough portions are passed through a steaming chest d spaced from the oven entrance by a compartment e, which can be opened to or closed from the atmosphere by a lid p. In the construction shown the chest d contains two steaming hoods h, h<1> which can be raised or lowered by hand or automatically by means interconnected with the conveyer mechanism. The entrance to the chest is closed by a door which is raised and lowered with the hood h. Heating-elements f, y<1> are arranged beneath the conveyer and within the chest respectively. Instead of using the hoods h, h<1>, the chest may be divided into steaming compartments by vertically moving partitions, and in one form described the two compartments are separated by a space which can be put into communication with the atmosphere.
