Abstract

Sodium metaphosphate suitable for use as the acidic constituent of baking powders is obtained by heating sodium metaphosphate, obtained at any desired temperature, to temperatures above 1000 DEG C., preferably to 1200 DEG C. The heating may be continued at 1200 DEG C. for several hours. The metaphosphate may be obtained in an extremely finely divided form by subliming it at temperatures above 1200 DEG C. According to the Specification as open to inspection under Sect. 91 metaphosphates other than sodium metaphosphate may be rendered suitable to use as the acidic constituent of baking powders by the above heat treatment. This subject-matter does not appear in the Specification as accepted.ALSO:Sodium metaphosphate suitable for use as the acidic constituent of baking powders is obtained by heating sodium metaphosphate, obtained at any desired temperature, to temperatures above 1000 DEG C., preferably to 1200 DEG C. The heating may be continued at 1200 DEG C. for several hours. The metaphosphate may be obtained in an extremely finely divided form by subliming it at temperatures above 1200 DEG C. A baking powder is described consisting of the metaphosphate, sodium bicarbonate, and maize flour. According to the Specification as open to inspection under Sect. 91, metaphosphates other than sodium metaphosphate may be rendered suitable to use as the acidic constituent of baking powders by the above heat treatment. This subject-matter does not appear in the Specification as accepted.
