hat sich aber gezeigt, daß derartige Gemische, sei es durch die Hygroskopizität,
sei es durch den Kristallwassergehalt nur zu unvollständig haltbaren Backpulvern
führten, selbst wenn man diesen Mitteln indifferent und puffernd wirkende Füllstoffe,
wie Kreide, Gips, Mehle aller Art u. a., einverleibte. Bereits nach wenigen
Wochen oder Monaten verlieren derartige Mittel bei insbesondere offener Lagerung

auch begrenzte Kohlensäureentwicklung aufweisen, so wiM man zweckmäßig einen Teil
des polymeren Phosphates,durch ein sauer reagierendes Salz bzw. eine geeignete organische
Säure ersetzen. Man kann also auf -diese Weise Backpulver mit geringem oder größerem
sogenannten Vortrieb herstellen. Dem erfindungsgemäß beanspruchten Backpulver lassen
sich in üblicher Weise Streckmittel, wie Kalziumcarbonat, Kalziumsulfat, Mehle,
