Abstract

304,181. Zeller, T. Jan. 16, 1928, [Convention date]. Cocoa manufacture.-In the preparation of fresh cocoa beans the known fermentation process is interrupted at the termination of the alcoholic fermentation and before the beginning of the acetic fermentation. The fermentation is interrupted by the application of heat, a temperature of between 45‹ C. to 70‹ C., and preferably between 55‹ C. to 65‹ C., being maintained for about 24 hours in order to complete the decomposition and loosening of the mucous covering. The beans are then washed, and thereafter dried. A rotary drum f with perforations e and stirrers g for washing the beans is shown. The beans are supplied on a belt conveyer band transferred to a hopper d by a stripper a. The drum is located in a cabinet h with a heating coil k, and the external surface of the drum is' cleaned by a brush o. The shaft n is rotated by gearing. The Specification as open to inspection under Sect. 91 (3) (a) comprises also reference to a single rotatable drum extending through a plurality of casings provided with heating devices, each casing having separate charging and discharging apparatus. This subject-matter does not appear in the Specification as accepted.
