Abstract

Shaped textured vegetable protein products simulating shaped comminuted meats are prepared without loss of shape and texture by shaping a comminuted partially hydrated textured protein (preferably along with rehydrated vegetable, cereal binder, fat and other additives) packaging with water, hermetically sealing and sterilising, the amount of water being sufficient to be totally absorbed by the shaped body during sterilisation to effect necessary hydration. The starting material may be toughened soya protein particles and is partially rehydrated at pH<8.5 to add 2.3-3 pts. water per pt. dry protein. The shaped mixture is cooked, e.g. by frying, and is packaged with water, optionally containing fat, in amount up to 60 wt% of the contents of the package.
