Abstract

A process and apparatus for the continuous peeling of vegetable products involves the use of a set of knives connected together by two endless chains each of which passes around two wheels. The knives constantly move past a series of bars parallel to the knives and to the axes of the wheels which bars are arranged on both sides of the chains in the regions where the chains are rectilinear. The bars, which support the vegetables during peeling, are arranged parallel to each other at intervals sufficient for the vegetable, after peeling to pass through the open space between two consecutive bars. The process and apparatus has particular application in the peeling or shelling of coffee-beans.
