Preserving potatoes.-Potatoes are separated into starch and pulp, which are separately treated by pressure &c. to remove water, mixed and dried by heat. Preferably, the grated potatoes are treated with water on a sieve, the starch is separated from the starchmilk in a centrifugal, the pulp is pressed, and the starch and pulp, after mixing, are dried. exhaust steam from the engine driving the plant being used. The water from the press is returned to the sieve.
