Evaporating egg preparations.-Eggs, parts of eggs, or mixtures of eggs with other substances are obtained in a fluffy form by rapidly drying in thin films at above 212‹ F., as by means of a twincylinder milk-dryer. The eggs &c. may be first reduced to a uniform liquid with water and strained.
