Abstract

1496087 Dutching cocoa M L CHALIN 25 Feb 1975 7858/75 Heading A2B Cocoa is dutched by pulverising a press cake or ribs thereof, mixing the cocoa with a 3-12 wt. % aqueous solution of an alkali to form a damp mass having a water content of 20-35% and up to 6% of alkali (equivalent to K 2 CO 3 ) and cooking to damp mass at 150-230‹F for 2¢ to 5 mins. under a pressure increasing to 500-1300 psi and extruding to cooked mass into a rod to form pellets. The pellets may be dried in a fluidised bed using a heated inert gas and then quickly cooled. The cooking is preferably effected in a screw type cooker/extruder having a screw of increasingly fine pitch nearer to the exit or extruder end.
