Abstract

1476283 Milk beverage D S O BULGARPLOD 15 May 1975 20733/75 Heading A2B A milk beverage comprises 20-40% of a mashed fruit or vegetable, 35-54% of skimmed or whole sour milk, citric acid (preferably 0.1-0.2%), apple pectin (preferably 0.1%) and sugar (preferably 6-9%). The ingredients are mixed, sterilised at 120-130‹C for 50-70 seconds, cooled, bottled and further sterilised at 85-95‹C for 8-10 minutes. The use of apple, peach, plum, apricot, quince, pear, strawberry, cherry, raspberry, grape, gooseberry, pumpkin, tomato and carrot is mentioned. The pectin is preferably in the form of a 2% by weight solution, and the sugar in the form of a 28-30% by weight syrup.
