Abstract

A lacteous drink is prepared by subjecting milk to lactic fermentation, diluting the milk either before or after the fermentation with 20 to 200 parts by weight of water per 100 parts by weight of milk, and homogenizing the mixture of fermented milk and water thus obtained. Whole, skimmed or reconstituted powdered milk may be fermented by Lactobacillus bulgaricus and Streptococcus thermophilus in 1 to 3 hours at a temperature of 40 DEG -45 DEG C. The drink preferably contains 1-17 grams lactic acid per litre. The following may be included in the drink: a sugar such as sucrose, glucose or maltose added, preferably to the initial milk, in a preparation of 10 to 100 grams per litre; a thickening agent such as pectin, an alkali metal alginate, gum arabic, gum tragacanth and other water-soluble gums, agar-agar, soluble starch and dextrin in a proportion between 0.05% and 1% by weight of the milk, preferably added during the homogenization, to increase the viscosity and prevent settling of the drink; and a fungicide and/or fungistatic non-toxic agent such as sorbic acid, benzoic acid, alkaline benzoates, salicylic acid and soluble salicylates in a proportion not exceeding 300 milligrams per litre of drink. Mineral water or carbonated water may be used for the dilution. The drink may finally be saturated with carbon dioxide gas by the injection of the gas or by admixture of the drink with soda water. Examples are given.
