In another aspect a fish processing machine comprises an endless band knife, a sharpening device having a pair of freely rotatable sharpening discs, one for each face of a cutting edge of the knife and located one on each side of the knife path and being spaced one in advance of the other in the direction of knife travel, each disc being mounted for rotation about an axis which is inclined to a plane containing a knife run such that it subtends with such a plane an acute angle when viewed perpendicularly to the direction of motion of the knife and an acute angle with such a plane when viewed in the direction of motion of the knife and an acute angle with such a plane when viewed in the direction or motion of the knife, and a knife guide disposed opposite each disc on the other side of the knife path. The embodiment shown is part of a machine for skimming fish fillets. Sharpening device 36, 38 is situated on return run 28 of endless band knife 23 immediately before free-running pulley 21. The device comprises two free-running grinding wheels 36 and 38, each dished on the surface facing the blade so that only the periphery of each surface contacts the blade. The two discs are mounted on arm 32 which pivots about axis 31. The discs are engaged by pushing handle 34 against the action of compression spring 49. The knife is also provided with guide means (not shown) in the cutting region.
