Abstract

1446140 Foodstuff treatment NESTLE SA 6 May 1974 [22 May 1973] 19814/74 Heading A2D A process for the incorporation of an antioxidant in a foodstuff comprises contacting the foodstuff with a solution of an antioxidant in a liquified gas and subsequently eliminating the gas. The liquified gas may be removed by supplying heat and/or reducing the pressure. The liquified gas is preferably dichloro-difluoromethane or liquid carbon dioxide. The treatment of carrots and potatoes is exemplified.
