Abstract

1413351 Tea UNILEVER LTD 30 Jan 1973 [31 Jan 1972] 4556/73 Heading A2B Unfermented tea is contacted with tannase and subsequently converted to black tea in the presence of natural tea enzymes. The tea may be in the form of a slurry of preferably fresh tea leaf, the contacting with tannase being effected under anaerobic conditions, and the conversion under aerobic conditions, the enzymes being provided by the tealeaf, whereafter the product may be separated into a black tea extract and a leaf residue, which latter may be extracted with water, the resulting extract being combined with the first extract. Alternatively the tea may be in the form of a green tea extract, the tannase being immobilised on a solid support, and the conversion effected in the presence of added enzyme, which may be similarly immobilised. The extracts may be dried to give an instant tea powder.
