Abstract

PURPOSE: To prepare "Edelfaule" wine of high quality, using Botrytis cinerea and ordinary wine yeast.
CONSTITUTION: Cells of Botrytis cinerea or its cultured product is inoculated in grape juice, and cultred. When the concentration of glycerine is the cultured medium reaches 15-27 g/1, pref. 20-25 g/1, ordinary wine yeast, e.g. Saccharomyces bailii Lindner, is added thereto and aerobically cultred. When the concentration of glycerine exceeds 35 g/1, the culturing is terminated, and concentrated grape juice is added thereto to perform alcohol fermentation.
