Abstract
1393893 Foodstuff preservation UNILEVER Ltd 4 July 1972 [9 July 1971] 32274/71 Heading A2D A package contains a moist foodstuff which would normally be subject to microbial spoilage but which has an alkaline pH obtained by the addition of an alkali to effect preservation during storage, and an alkali-neutralising substance which is not available to act upon the foodstuff during storage at ambient temperature but which is releasable to act upon the foodstuff by heating the contents of the package, whereby the effect of the alkali on the foodstuff is. reduced or removed. The alkali-neutralising substance, e.g. an organic or inorganic substance, may be encapsulated e.g. in gelatin, or bound within particles of edible fat. The alkali may be sodium carbonate or hydroxide. Clupeine, salmine and sequestrants may be present. Exemplified foodstuffs are comminuted raw meat, chicken supreme, sausage meat and beef risotto.
