1380477 Treating soya ETS URY & CIE SOC EN NOM COLLECTIF and M GAY 11 Dec 1972 [14 Dec 1971] 57116/72 Heading A2Q The protein fraction of plant material, e.g. soya, which contains both carbohydrate and protein is enhanced by (a) totally or partially removing oil from the plant material, (b) suspending the deoiled plant material in an aqueous medium, (e) treating the suspension with an enzyme so as to render a substantial part of the carbohydrate metabolisable by yeast and (d) converting the metabolisable carbohydrate into protein by yeast metabolism. In a specific example, soya flour from which the oil has been removed is toasted, dispersed in dilute hydrochloric acid and treated at elevated temperature with an enzyme mixture consisting of polygalact ureinase, pectin methyl esterase, pectin transelminase, hemicellulase and invertase. Cellulase and amylase may also be used. The invertase may be #-fructosidase, After the enzyme treatment, the reaction mixture is heated to kill the enzyme, treated at elevated temperature with bakers' yeast (Saccharomyces cerevisiae), treated with ammonium phosphate, heated to kill the yeast, concentrated by evaporation and spray dried.
