Preparing flour from special materials; bleaching and conditioning flour.-Bean flour is prepared in a white and odourless condition by treating the coarsely broken beans, after removal of the bran and, if desired, the oil, with a solution of an organic acid such as acetic acid, which may be in the form of vinegar. The acid is removed by washing with water, or neutralized by a solution of sodium bicarbonate, and the beans are then ground. The acid may be warmed. The flour is used in the manufacture of confectionery, soap, bath powder, milk substitutes, &c.
