Emulsions, making.-A dry shortening material for bread, biscuit, cake, &c. is made by boiling starchy material, such as flour, in water, adding oil or fat, emulsifying, homogenizing in a disc homogenizer or the like, and drying in a double cylinder " Just " drier or like apparatus. In an example two parts of cocoanut oil are added to one part of flour boiled in ten parts of water. The oil may be added before or after boiling. Acid or acid salts may be added before boiling, and gluten, milk, dried milk, casein, or alkali casein may be added before adding the oil. Specification 17002/11 is referred to.
