Abstract
1349492 Candy CPC INTERNATIONAL INC 12 Oct 1971 [26 Oct 1970] 47532/71 Heading A2B A clear hard candy having a moisture content below 4wt%, and comprising 0-20wt% sucrose, 0-10wt% of a starch hydrolysate having a D.E. of 1-6, and from 80-100wt% of a starch conversion product having a D.E. of 35-60, a dextrose content of 0-10wt%, a maltose content of 55-90wt%, and a polysaccharide content, having a degree of polymerisation of 3 and greater, of 10-40wt%, may be made by heating an aqueous syrup of the above ingredients for sufficient time to reduce the moisture content to less than 4wt%, and allowing the cooked syrup to cool and solidify.
