[Also in Division C3] A depolymerized anylopectin fraction of starch (see Division C3) of viscosity 250- 20,000 cps, at 60‹C. (Brookfield viscosimeter; 20 r.p.m.) is used in gum-like confectionary as a partial or complete substitute for gum arabic. In examples other adjuvants are sugar, glucose syrup, gelatin and NH 3 C1, together with flavour and colour.
