Abstract

1302545 Pasteurised egg BRITISH CELANESE Ltd 24 June 1970 [25 June 1969 12 Aug 1969] 32043/69 and 40180/69 Heading A2D A process for producing a pasteurised egg preparation comprises dispersing 0.25 to 4% by weight of a thermogelling cellulose ether in liquid whole egg, heating to effect pasteurisation and cooling. The ether may be methyl cellulose or hydroxypropylmethyl cellulose. The cellulose ether may be added to the whole egg as a dispersion in hot water or as a concentrated dispersion in liquid whole egg. The cellulose ether-egg mixture may be homogenised prior to heating. The cooled preparation may be frozen or dried (e.g. spray-dried).
