Abstract
1,247,979. Coated nutmeats. CPC INTERNATIONAL Inc. 31 Oct., 1969, No. 53635/69. Headings A2B, A2D and A2Q. Nutmeats are coated with a mixture of mannitol and sorbitol, the coating comprising 50-90% by wt. mannitol and 10-50% by wt. sorbitol, to make them attractive in appearance and more stable against deterioration. The mixture may also comprise a colouring material and salt. The nutmeats may be further coated with salt, turmeric, oleoresin of paprika, and colouring material (e.g. caramel, orange and yellow colours). The nutmeats may be preheated and dipped in or sprayed with the molten mixture or an aqueous solution of the mixture. The nutmeats may be roasted in air prior to coating or roasted whilst immersed in the molten mixture. The nutmeats may be whole, broken or ground. Nuts specified are peanuts, walnuts, pecan nuts, cashew nuts and almonds.
