Animal fat is purified by treating at 130- 212‹ F. with a composition comprising 30- 95% by wt. metal silicate and 0À5-6% by wt. of alkali metal or alkaline earth metal phosphate as buffer agent, silicic acid being formed in situ, settling through the fat and being separated from the fat thus removing proteinaceous fines. Water and/or acid (preferably phosphoric or citric) may be added to the fat before addition of the silicate containing composition. The composition is preferably an aqueous solution of sodium silicate, di- or tri-sodium phosphate, tannic acid and a wetting agent, e.g. the oxyethylated adduct of tertiary octyl phenol, Na salt of sulphonated ethylbenzene, ethylene glycol monolaurate, Na methyl naphthalene sulphate, ethyl phenyl ether of polyoxyethylene glycol, glycerol monoricinoleate ethylene oxide nonylphenol and Na lauryl sulphate.
