An emulsifier composition useful in the preparation of bread, cakes, and other bakery goods, comprises a conjoined crystal material as set forth and claimed in Specification 1,012,474, and an acyl lactylic acid in which the acyl radical is derived from a C 16 -C 24 fatty acid, the ratio of conjoined crystal material to acyl lactylic acid being in the range of from 1:1 to 9:1. The composition is preferably employed in the form of an aqueous dispersion.
