Abstract
1,195,634. Cocoa flavour. PETER PAUL Inc. 23 April, 1968, No. 19038/68. Heading A2B. A cocoa flavour is prepared by recovering an aqueous extract from cocoa shells, for example by heating the shells, which may be contained in the waste roast material from processing cocoa beans, with water at 95-100‹C. for about 1 hour. The solution may be concentrated to a syrup of freeze or spray dried. The product may contain less than 10% fat. The shells may be subjected to enzymatic digestion prior to extraction, and it is advantageous for a mild basic material, such as sodium, potassium, or ammonium carbonate, to be present in the extracting water, in which case the alkalinity of the resulting solution may be neutralized, for example by the addition of phosphoric, sulphuric, or tartaric acid. Examples refer to the use of the flavouring in cookies, cakes, puddings, frostings, and cocoa beverage.
