[Also in Division A5] A process for increasing the bulk of synthetic sweeteners, e.g. sodium saccharinate with or without a taste correcting agent such as a cyclamate, glycocollin, vanillin or other additives and excipients for improving solubility and taste, such as to produce pieces resembling lumps of sugar, comprises forming the sweeteners and excipients into an aqueous solution, lyophilising the aqueous solution obtained and transforming the lyophilised product into lumps of regular form, e.g. parallelepipeds, cubes, truncated pyramids &c. The process is carried out by freezing the aqueous solution in trays at between minus 18 degrees to minus 40 degrees, then subjecting them to cryodessication or lyophilisation at a low pressure of about 10<SP>-2</SP> mm Hg, such that the necessary heat to sublime the water is provided at a temperature which does not rise above the freezing point of the product. Lyophilisation is preferably carried out in trays serving for containing the lumps for commercial presentation, either ribs or partitions being provided in the trays so that either grooves are formed in the product, enabling it to be broken easily into the desired lumps, or compartments for separate lumps are defined, respectively. [The Specification includes a disclaimer to the use of cyclamates, in order to comply with The Artificial Sweeteners in Food Regulations, 1969.]
