Abstract
1382335 Meat flavour CPC INTERNATIONAL Inc 10 April 1972 16512/72 Heading A2B A flavouring similar to that of meat extract is prepared by performing a Maillard reaction at elevated temperature of at least one saccharide, at least one amino acid, other than the egg component, for example an acid hydrolysed protein, which may have been fortified by monosodium glutamate, and an egg component selected from egg white, egg yolk, and whole egg dispersion, which egg component may be in hydrolysed, in particular enzyme hydrolysed, form. The reaction mixture may include a sulphide component for example the juice from a plant such as cabbage or onion.
