[Also in Division F4] An enclosure, such as is used in bakeries for proving, within which an atmosphere of controlled humidity and temperature can be maintained comprises a heat-insulated shell having a door and opposed side walls and along at least one side wall a steam-generator 14 from which steam passes upwardly to a pipe 21 extending along the side wall below the upwardly sloping surface 25 of a crash-bar 10 and has along its length holes 20 from which the steam is discharged into the enclosure, and air-heating means positioned below the pipe 21 so that air heated by the heating means mixes with the steam discharged from pipe 21, the supply of heat to the steam-generator and the air-heating means being respectively controlled by a humidistat and a thermostat located within the enclosure. The steam-generator 14 comprises a tank 16 closed by a lid 17 and containing water within which an electric-heating element 19 is immersed. The water level in the tank 16 is maintained from a supply tank arranged along the rear wall of the enclosure. The airheating means comprises a tubular, finned electric-heating device arranged between the side wall of the enclosure and a vertical plate 23. The lower surface 25 of the crash-bar 10 preferably is inclined at between 30‹ and 50‹ to the horizontal and the axes of the steamdischarge holes 20 are inclined at between 15‹ and 30‹ to the horizontal.
