Abstract
1,145,638. Food compositions. STAUFFER CHEMICAL CO. 15 Nov., 1967 [30 Dec., 1966], No. 51905/67. Heading A2B. In prepared non-butterfat dairy products which normally contain sodium caseinate, 0.1-100% of the sodium caseinate is replaced by undenatured lactalbumin (which term includes #-lactoglobulin) phosphate. Products referred to include coffee whiteners, whipped topping bases, imitation sour cream and cream cheese, mellorines, frozen desserts, puddings, custards, process cheese, frozen cream pies, snack dips, baby foods, "instant" breakfasts, cocoa drinks, and soups. Numerous formulations are given.
