Abstract
1,138,425. Emulsifier. AMERICAN LECITHIN CO. 31 March, 1967, No. 14933/67. Heading A2B. [Also in Divisions B1 and C5] Fatty oil compositions containing as additive 0.1-5% by wt. of the fatty oil, of safflower phosphatide are included in food products. Examples relate to dietetic beverages (containing skim milk solids), shortenings, salad dressing, cocoa powder, and ice cream. The fatty oil may be animal or vegetable, saturated or unsaturated, plain or hydrogenated, but specifically mentioned are cocoa butter, safflower oil, cottonseed oil, and coconut oil. The safflower phosphatide may contain 50% or more of linoleic acid and be substantially free of linolenic acid. Soybean phosphatide which contains linolenic acid may be added to the compositions in amount 5-50% based on the total weight of safflower phosphatide and soybean phosphatide.
