1,137,228. Whey products. FOREMOST DAIRIES Inc. 8 Aug., 1966 [16 Aug., 1965; 17 Jan., 1966], No. 35338/66. Heading A2B. A method of producing whey products, e.g. for use in infants' foods or with rice hull or bran comprises heating a whey concentrate from which a substantial amount of lactose has been removed in the form of crystals, to eliminate residual lactose crystals, subjecting the concentrate to clarification to remove insoluble protein and then subjecting the delactosed whey concentrate to electrodialysis to reduce the ash content. The whey is preferably concentrated by vacuum evaporation and the lactose crystals formed on cooling the concentrate are substantially removed by centrifugation or filtering. The electrodialysed product may be neutralized, concentrated and spray-dried. The wheys specified include cheese wheys, e.g. cheddar, cottage, Swiss, Edam and jack cheese
