Abstract

A process for treating lactoserum, comprises hydrolysing the lactose of the lactoserum using beta-galactosidase enzyme, then ultra-filtering the product to recover material rich in protein. The hydrolysis is pref. controlled by varying the conditions esp. the enzyme concn. to give 50% hydrolysis. The retentate from the ultrafiltration pref. has a nitrogenous material content of 20-80% based on the dry material, esp. a retentate contg. 38% nitrogeneous material, 54% glycides and 8% ash on a dry basis. The retentate is pref. concn. and esp. dried. The use of the lactoserum is made difficult by the presence of lactose and minerals. The lactose is only slightly sweet, has no interesting organoleptic properties, has a low solubility, and its use in human food is limited because of intolerance problems. The minerals give an undesirable salty taste. The present process yields a milk powder very rich in protein and other useful foods, by-products.
