A package of sausage and/or other foodstuffs such as sliced bacon, cheese, comprises a tray having recesses 3 containing the foodstuff and filled with a bacteria inhibiting gas such as nitrogen which is retained in the recesses by a sealing foil 5 welded on to the tray, the weld preferably being strippable. The foil may be of transparent plastics or aluminium whilst the tray may be of P.V.C. The tray may be evacuated prior to introducing the gas.
