Abstract
A gellable cellulose sulphate ester having a D.S. of 1-3 is made by mixing cellulose, sulphur trioxide and a lower N-dialkylamide in which the alkyl groups contain 1 to 4 carbon atoms. The sulphating agent may be a complex of sulphur trioxide with an N-dialkyl amide, at least 1 mole of the latter being combined with 1 mole of sulphur trioxide. The cellulose, to which the complex is added, is preferably in admixture with a N-dialkyl amide diluent, which may be the same compound as used for the complex formation. Esterification is suitably carried out at 0-25 DEG C. for 2-8 hours using 1-8 parts of a 1:1 SO3-N-dialkyl amide complex per 1 part of cellulose. The product may be neutralized by alkali and precipitated by alcohol or acetone. Specified N-dialkyl amides are dimethyl formamide, diethyl formamide, dimethyl acetamide, diethyl acetamide and dimethyl propionamide. The esters may be obtained in free acid form or as salts with metallic or organic cations. The esters form thermo-reversible aqueous gels in presence of potassium or ammonium ions.ALSO:An edible milk gel is made by adding 1 cup of hot milk to a dry mixture of potassium cellulose sulphate (3.0g); sodium chloride (0.1g); vanillin (0.1g) and sugar (35.0g).
