Abstract
1,102,324. Treating fish; salmon preparations; preserving fish. "FAIRY" FOOD PRODUCTS CO. Ltd. 6 Oct., 1965 [8 July, 1964], No. 28059/64. Headings A2B, A2D and A2U. A fish treating process comprises substantially separating the curable flesh from the uncurable sinew and, before or after separation, curing the curable flesh e.g. by smoking or immersing in salt solution. The separating step may be carried out by inserting the fish in container 1 the bottom plate 4 of which is provided with apertures 10 and projections 9, and rotating the shaft 6 which is spring urged downwards and carries blades 7, so that the blades 7 force the curable flesh with a grating action through the apertures 10, the sinew being held back. The fish treated in the apparatus shown may be frozen filleted smoked salmon. The macerated salmon may be mixed with oil or mayonnaise to give a smoked salmon spread, mayonnaise or garnish.
