Abstract

1,049,335. Emulsifier. SOCIETE DE PRODUITS CHIMIQUES ET DE SYNTHESE. Aug. 7, 1964 [Aug. 9, 1963], No. 32333/64. Heading A2B. An emulsifier for food products comprises a sucroglyceride, being an interesterification product of a sugar and a natural fat such as lard, tallow, palm oil, copra oil, maize oil, or soya oil, together with at least 10%, preferably 10-50%, wt. of lecithin. Examples relate to the use of the emulsifier in preparing synthetic milk for feeding young animals, comprising milk powder, tallow, and water; biscuit pastes comprising eggs, powder sugar, flour, baking powder, and ammonium carbonate; and cake mixes comprising eggs, semolina sugar, flour, and fat (margarine or palm oil).
