Abstract

<PICT:1035621/C6-C7/1> In a continuous con-flow process for boiling and hopping brewers' wort, involving a boiling zone A, a hopping zone B and a separation zone C; the wort is passed through at least the boiling zone and the separation zone at a controlled rate; the temperature of the wort in the boiling zone is raised to and maintained at boiling point e.g. by steam jacketing 9 or electrically, for a controlled period to induce a hot break; hops are passed through the hopping and separation zones at a controlled rate and are thoroughly mixed with extracting liquor (wort or water) in the hopping zone to form a dispersion which is maintained at the requisite temperature for extracting the desirable substances from the hops; and the boiled wort and the hop dispersion are passed into the separating zone for separation of spent hops from the hopped wort. Either the wort passes successively through all three zones and constitutes the extracting liquor in the hopping zone, or the wort passes through the boiling and separating zones, water constitutes the extracting liquor and hopping of the wort takes place in the separation zone. The separation zone as illustrated may be replaced by the belt-type of filter described in Specification 943,811. Recycling of controlled amounts of liquid in and between zones may be carried out as indicated in Fig. 4 (not shown).
