Abstract
In the continuous heat treatment and hopping of brewers' wort, in which a slurry of hops in wort is formed and fed in continuous flow to a boiling vessel and boiled therein by the heat from either injection of steam or an indirect heating surface, the hops are maintained in suspension without mechanical agitation by means of turbulence arising from either the steam injection or from ebullition (as the case may be) and from recirculation of the wort and hops through the vessel. Prior to the formation of the hop-wort slurry, the wort is pre-heated e.g. to 180 DEG F., or pre-boiled by direct injection of steam or indirect heat exchange with steam. A proportion of the hops may be added before the pre-boiling. The level of wort or slurry in the pre-boiling and boiling vessels is controlled by a weir. The heat-treated and hopped wort is filtered. The hop-wort slurry may be prepared by entraining hops into wort swirling around the wall of a mixing vessel, the rate of withdrawal from the vessel of the resultant slurry being such that there is no static level of liquid in the vessel, or by mixing hops and wort in a small agitated vessel. According to the disclosures of the examples, pressures of 10 and 15 inches water gauge were maintained in the boiling vessel and a steam supply was either injected at a gauge pressure of between 20 and 30 lbs. per sq. inch or passed through an indirect heat-exchanger to provide an evaporation rate of 6% per hour.
