Abstract

Anthocyanidin glycosides are isolated from a mixture of anthocyanidin glycosides and sugars by fermenting the sugar content of the mixture by means of yeast which will ferment the sugars but which will not attack the glucosides and separating the anthocyanidin glucosides from the fermented mixture. The mixture to be fermented may be the juice or an extract of plants or fruit such as the juice or an extract from bilberries. It is preferable to lyophilize and acclimatize the yeast to the anthocyanidin glycoside content of the mixture before fermentation. A suitable yeast is Saccharomyces oviformis. The fermentation may be carried out under partial aerobic conditions and carbon dioxide formed during the fermentation is preferably removed from the vicinity of the fermenting mixture.ALSO:Therapeutic compositions useful for improving visual acuity and for the treatment of vascular diseases which increase the fragility and the permeability of capillary walls contain as the active ingredient anthocyanidin glucosides and an inert diluent or carrier. The composition may be administered in the form of tablets, drops or injectable solution.
