L’invention concerne un procédé d’extraction d’huile à partir de graines ou de fruits de plantes oléagineuses, comprenant une étape de pressage et une étape de séparation des fractions huileuse et solide, où qu’au moins une partie des graines ou des fruits est humidifiée avant l’étape de pressage.
